Chef Andrew Shimer believes that respect and curiosity makes the best food.
As a young cook curiosity drove him into this career while talented mentors taught him the chain of respect needed for food. Running with that, Andrew now nurtures relationships with farmers and ranchers giving the menu a better sense of farm to plate. And that is exactly the key ingredient he’s looking for. “I want my guests to think to themselves, ‘I don’t know why this is so good but it is’”
The menu itself represents a diverse arena. From Africa to Spain, Andrews likes to refer to his menu design as Modern American with Mediterranean influences.
